Ramadan 2020: Stir-Fried Cabbage


Stir-Fried Cabbage Recipe





Servings: 6
INGREDIENTS:
  • 300 gm cabbage, remove core and cut into pieces
  • 20 gm glass noodle, soak in water until soft
  • 2 cloves garlic, sliced
  • 1 medium-sized red onion, sliced
  • 1 red chilli, sliced
  • 1 tsp salt, adjust to taste
  • 1-2 egg, beaten
  • 200 gm prawns 
  • fried shallots
  • 2 tbsp cooking oil

DIRECTIONS:

1. Heat oil in the wok.

2. Stir in onions, garlic and chilli until onions are softened.

3. Stir in prawns and cook just until they turned pink.

4. Pour in beaten egg. Let it sit for a while before scrambling.

5. Once eggs are almost cooked, add in salt, cabbage and glass noodles. Stir until cabbage is tender.

6. Top stir-fried cabbage with some fried shallots.

Ramadan 2020: Long Beans Tamarind Soup


Long Beans Tamarind Soup Recipe





Servings: 6
INGREDIENTS:
  • 200 gm long beans, cut into 2 cm length
  • 2-3 tamarind peels
  • 1 tsp salt, adjust to taste
  • 2 tsp sugar, adjust to taste
  • 3 cups water


(A) BLEND:
  • 5 shallots
  • 1 clove garlic
  • 2 tbsp dried anchovies, soak in water for 5 minutes
  • 5 pieces dried chillies, soak in hot water for 5 minutes
  • 1/4 cup water
  • 1 tsp shrimp paste, dry toast on medium heat until dry and light

DIRECTIONS:

1. Blend ingredients (A) until smooth.

2. Add 3 cups of water, blended ingredients and tamarind peels into a pot. Bring to a boil.

3. Add salt and sugar. Season to taste.

4. Lastly, add long beans and let cook until tender.

Bean Sprouts with Tofu


Stir-Fried Beansprouts and Tau Kwa Recipe




Servings: 4
INGREDIENTS:
  • 300 gm beansprouts roots removed 
  • 50 gm chives cut into 2 cm length 
  • 1-2 piece small Tau Kwa (firm beancurd) cut into small cubes
  • 100 gm prawns deshelled and deveined
  • 3 cloves garlic thinly sliced (20 gm)
  • 3 bulbs shallots thinly sliced (40 gm)
  • 1 red chilli thinly sliced
  • white pepper powder
  • salt
  • 1/2 cup cooking oil

DIRECTIONS:

1. Heat oil and fry beancurd until lightly browned. Remove and set aside.

2. Reserve 2 tbsp of the frying oil in the wok and next add shallots, garlic and chilli. Stir fry until fragrant.

3. Add prawns and let cook until it changes colour.

4. Lastly, add the fried beancurds, beansprouts, chives, salt and white pepper powder. Bring heat to high and stir fry for another 1-2 minute(s).
