Crispy Black Pepper Chicken Recipe
Do the double-frying method for even crispier chicken pieces.
Adjust the amount of black pepper powder to make it spicier or mild.
INGREDIENTS:
- 800 g boneless chicken thighs cut into smaller pieces
- 1 cup cornflour
- 1 tbsp minced garlic
- 1 tsp minced ginger
- 1 red capsicum cut into smaller pieces
- 100 g snow peas
- spring onions chopped
- cooking oil
(A) MARINADE:
- 1 tsp sugar
- 1 tsp salt
- 1 large egg beaten
(B) SAUCE MIXTURE:
- 6 tbsp oyster sauce
- 4 tbsp sweet soy sauce
- 1-2 tbsp coarse black pepper powder
- 1 tsp white vinegar
- 1 tbsp brown sugar
DIRECTIONS:
1. Add chicken and ingredients (A) in a mixing bowl. Mix well and marinate for 30 minutes.
2. Mix all of ingredients (B) in a bowl and set aside.
3. Prepare cornflour on a wide plate. Coat marinated chicken pieces with cornflour individually.
4. Heat enough oil to deep fry chicken. Fry chicken until golden brown. Drain excess oil on a paper towel and set aside.
5. Next, heat about 3 tbsp of cooking oil in a cooking pan.
6. Add garlic, ginger and capsicum. Stir-fry the ingredients until fragrant.
7. Add in the sauce mixture (B) that we have prepared earlier on. Bring mixture to a simmer. (Note: add some water at this stage, if you prefer to have a looser sauce.)
8. When the sauce has come to a gentle simmer, add in the snow peas and fried chicken. Stir fry for about 2 minutes or until chicken pieces are well-combined with the sauce.
9. Lastly, add in some spring onions and give a quick mix. Off heat.
10. Serve while still hot.
