Crispy Almond Cookies Recipe
Yield: 25 cookies
INGREDIENTS:
- 120 gm sliced almonds
- 2 large egg whites
- 35 gm wheat flour
- 65 gm icing sugar
- 30 gm salted butter melted
- 1/3 tsp vanilla extract
- 1/3 tsp almond essence
DIRECTIONS:
1. Lay almonds flat on a baking sheet and toast in a 120 degree celcius oven for 10 minutes. Remove and set aside.
2. Add egg whites and sugar in a mixing bowl. Whisk the mixture until there are no more sugar lumps.
3. Next, add the melted butter, flour, almond essence and vanilla extract. Whisk the mixture until it forms a smooth batter.
4. Add in toasted almonds. Stir to combine.
5. Pre-heat oven to 160 degree celcius.
6. Scoop teaspoonfuls of batter onto a lined baking tray. Spread batter out thinly with a wooden stick/toothpick. Leave a good space in between as batter will spread out during baking.
7. Bake for 10 minutes or until cookies have turned pale brown in colour.
8. Remove from oven and gently lift cookies and place on a wire rack to cool.
9. Let cookies hardened and cooled completely before storing them in an airtight container.
